If you’re busy cutting pumpkins for Halloween, don’t throw away all of the beautiful pumpkin flesh inside. Instead, make this deliciously devilish Mossy’s Pumpkin Soup.
A perfect starter for a Halloween dinner party, or just a warming cup of loveliness for your party guests around the bonfire. Best of all, it’s really simple to make and something the whole family will enjoy.
Mossy’s Pumpkin Soup Recipe
2 tbsp olive oil
2 onions, finely chopped
1kg pumpkin, peeled, deseeded and chopped into chunks
700ml vegetable stock or chicken stock
200g Mossy’s Original
– Step1 –
Heat the olive oil in a large saucepan, then gently cook the onions for 5 mins, until soft but not coloured.
– Step 2 –
Add the pumpkin, then carry on cooking for 8-10 mins, stirring occasionally until it starts to soften and turn golden.
– Step 3 –
Pour the stock into the pan and season with salt and pepper. Bring to the boil, then simmer for 10 mins until the pumpkin is very soft.
– Step 4 –
Pour the Mossy’s Original into the pan, bring back to the boil, then purée with a hand blender. For an extra-velvety consistency, you can pour the soup through a fine sieve.
– Step 5 –
Serve with Mossy’s swirled on top with a sprig of coriander, for a hauntingly dreamy topping!
